We are an Anglo-Turkish company committed to producing delicious natural products made from nuts. We started by importing Cashew Nuts from South East Asia to Turkey. Then, with a qualified Doctor and nutritionist as part of our team, we came up with the idea of producing our own all-natural, nut-based products.
Dr Ayse Yildirim (pictured above) was born, in Istanbul, in 1982. After completing her primary and secondary education, she studied Medicine at Istanbul Bilim University Faculty of Medicine from 2000 to 2006. She then worked as an assistant Doctor in Marmara University, Department of Pediatrics before leaving in 2011 to take up a position as a Medical Director with GlaxoSmithKline. In 2016, she started a PhD in Nutrition at Istanbul University Health Sciences Institute and also worked as a physician in the Nutrition Polyclinic of Istanbul University, Istanbul Faculty of Medicine, Department of Child Health and Diseases, Metabolic Diseases between 2016-2018. Ayse moved to Cambodia in 2018 and practiced medicine there for various charities and non-profit associations. She organized events throughout the country and delivered training on the importance of clean water use and hygiene issues, as well as conducting studies on dietary habits, plant-based and Ayurverdic nutrition in South East Asian Countries.
While in Cambodia, Ayse’s husband, Aytac, started to export cashew nuts from South East Asia to Turkey and Ayse had the idea of producing Cashew Nut Butters and Cheeses, using nuts freshly harvested from local cashew plantations. After testing out their products on their very cosmopolitan group of friends and colleagues, with an overwhelmingly positive response, they decided to return to Turkey at the beginning of 2020 to start the commercial production of their products there. So they set up the Itz Nutz company, along with a British partner, who had also worked in South East Asia and after initially producing their products in a dedicated room in their apartment, they have recently set up a purpose built production facility in the Balmumcu area of Istanbul, where they will soon be opening a small café and shop. And such is the interest in Itz Nutz and our products that we fully expect to open more shops and cafes very soon, as well as expanding our online sales operation and selling to other outlets. All our products are free of dairy, lactose, palm oil and have no added sugar. Currently our products are all Cashew Nut based, but we have ambitious plans for a wide range of products using other nuts. However, we will always make sure that they are 100% natural and that there is no cross contamination between nut varieties.
We are committed to producing the best quality, tastiest natural, nut-based products. All our products are suitable for Vegans and Vegetarians – and also for those with a whole range of specific dietary requirement, food allergies and intolerances. But we believe that our products are so delicious, while at the same time being healthy and all natural – that there is huge potential for the products to have universal appeal to everybody. And it is our mission to bring nut-based products such as Cheese, Butter, Milk and Flour from Niche to Mainstream!
Although we are 100% committed and deadly serious about our business – we also want to make it fun, both in the production and in the marketing. Natural, healthy food doesn’t have to be boring! Hence our fun name and logo.
Oh – and for those of you not fully au fait with text slang – as well as meaning ‘It’s’ – ITZ also stands for ‘In The Zone’. And in the world of healthy, nut-based products – we are definitely ‘In The Zone’
Cashews are a kidney-shaped seed, attached to a fruit, which grows on a cashew tree — a tropical tree native to Brazil but now cultivated in various warm climates across the world.
The cashew fruit has a bulbous, oval to pear shape, with a waxy, smooth golden-yellow or red coating. Attached to the bottom of the fruit, there is a double-hulled shell that encases a kidney-shaped, green seed which is the raw form of the cashew nut.
The processing of the cashew nut in their shells into edible cashew kernels takes the following steps: roasting, shelling, drying, peeling, grading, quality controls, fumigation and packaging.
All these steps have to be conducted with care to obtain good quality and good grade kernels.

Currently we produce 2 types of Nut Butter, a Dairy Butter, a Cream Cheese, a Mozzarella Cheese – and an amazing Hard Dairy Style Cheese – all made from Cashew Nuts, The nut butters have a mouth-watering creamy cashew flavour – but all the other products taste amazingly like their dairy equivalents – in many cases better! Nobody who tastes our dairy style products can believe they are made from Cashews!
